Cooking Steps

1. Preheat the oven to 180 °C (350 °F) and adjust the oven rack to the middle position. Prepare two baking sheets by lining them with parchment paper.

2. In a large mixing bowl, cream together 1 cup (240 g) of softened unsalted butter, ¾ cup (150 g) of granulated sugar, and ¾ cup (165 g) of packed brown sugar using an electric mixer on medium speed for about 3–5 minutes until light and fluffy.

3. Add in 2 large eggs and 1 teaspoon (5 ml) of vanilla extract to the butter-sugar mixture. Mix on medium speed until well combined, approximately 1–2 minutes.

4. In a separate bowl, whisk together 2 ½ cups (315 g) of all-purpose flour, 1 teaspoon (4 g) of baking powder, ½ teaspoon (2 g) of baking soda, 1 teaspoon (3 g) of ground cinnamon, ½ teaspoon (1 g) of ground nutmeg, and ¼ teaspoon of salt.

5. Gradually add the dry ingredient mixture to the wet ingredients, mixing on low speed until just combined.

Don’t overmix; the dough should be soft but not sticky.

6. If desired, add a few drops of food coloring to the dough and gently fold in until evenly incorporated for a festive touch.

7. Use a cookie scoop (about 1 tablespoon capacity) to portion out the dough onto the prepared baking sheets, spacing them 5 cm (2 inches) apart.

Flatten each dough ball slightly with the palm of your hand.

8. Bake in the preheated oven for 10–12 minutes or until the edges are lightly golden and the centers appear set but still soft.

Remove from the oven and let sit on the baking sheet for about 5 minutes before transferring to a wire rack to cool completely.

9. Prepare the filling by mixing 1 cup (240 ml) of jam or frosting with 2 tablespoons (30 ml) of milk in a small bowl until smooth.

10. Once the cookies are completely cool, spread a thin layer of the filling on the underside of half of the cookies.

Top each filled cookie with another cookie, bottom side down, creating sandwich cookies.

11. For added sweetness, dust the assembled cookies with 1 ½ cups (190 g) of powdered sugar before serving.

12. Store any leftover cookies in an airtight container at room temperature for up to 1 week.
